“Since my trips to the US had introduced me to the marvel that is kombucha, I returned home to the UK searching for some this side of the pond. Alas the best I could find was a sugary needs-to-be-diluted version, that is until “GO! Kombucha” came on to the market in 2011.

I love this kombucha! It’s so nice to be able to drink something that has a bite to it and is good for me – something that is not always easy to find in the world of raw foods. Of the two flavours, Chinese Green Sencha is my favourite, but not by much – the Chinese Red Pu-Erh tea is also great.

Chocolate (Carob) Pudding

After last month’s dose of green healthiness with Tina Pruitt’s Green Juice recipe, this month we’re going for an indulgent and delightful pudding recipe.

This recipe has been a favourite of mine for many years and is one of those featured in my 50 Recipes eBook. It's great for dessert at any time of year, but especially in the colder months when you want something sweet and comforting.

Equipment: Blender or food processor

Ingredients:

• 2 avocadoes
• 1 cup dates
• 1/2 cup raw carob powder
• Water as required

Directions:

1. Simply blend all ingredients in a blender, food processor or with a hand blender until the mixture is smooth and creamy.
2. Taste test before serving. Add more avocado if you'd like it richer and/or creamier, add more dates for extra sweetness or add more carob for a stronger chocolate flavour.

Serve on its own or with raw ice-cream for the ultimate treat.

Raw Coach Top Tips:

• If you don't like carob powder you can use this with cocoa powder or raw chocolate powder instead.
• This recipe will keep for about 2-3 days in the fridge.

When it comes to pre-packaged raw foods, being brutally honest, there have been only a handful of companies in the UK that have genuinely impressed me. The Living Food Kitchen is one of them, and to date, is sitting in the number one spot. What the people at LFK have managed to do is take very simple, healthy raw food recipes and create desserts, dips and drinks that are flavoursome, rich and satisfying for every type of eater. While I love the grab-and-go aspect of eating LFK foods, my boyfriend - a totally sensual eater – will happily spoon his way through a lemon, blueberry or raspberry cheesecake and enjoy it just as much as any other cheesecake. Plus he loves the fact that it’s actually good for him.
